Jalapeno Citrus Salmon

I really love to roast salmon to take in my lunch, but putting lemon pepper on it gets a little old sometimes. So, I try to experiment with new seasoning combinations. This week I had a lot of mandarin oranges and had just bought jalapeno pepper spice…and my recipe was born!

Ingredients:

  • 4-5 mandarin oranges (depending on their size/the size of your salmon filet)
  • jalapeno spice or fresh jalapeno ground into a paste (to your heat tolerance… I like it spicy!)
  • garlic powder or minced garlic
  • salt & pepper to taste
  • parsley to top

Juice 2-3 of the oranges into a small bowl, add jalapeno, garlic, salt and pepper until the taste is to your liking and then rub into fish on both sides. Top with sliced mandarin oranges and sprinkle parsley on top (just for looks!).

Roast in a 450 degree oven for about 12-15 minutes or until cooked through.

Enjoy over mixed greens as a salad or with some freshly steamed veggies as an entree. 🙂

brocc soupSuper Easy Broccoli Soup

Ingredients:

  • 1 head broccoli (cut into florets)
  • Cheyenne pepper
  • Black pepper
  • lemon juice
  • Salt
  • Water to boil broccoli
  • Chicken/veggie broth

Place the broc in a large pot, cover with water and bring to a boil. Allow to boil until you can stick a fork through the stems. Remove brocc placing it in a blender with the spices, a few cups of the water you used boil it, and a squeeze of lemon juice. NOTE: you could use broth to blend the soup for added flavor but either way, it tastes super fresh!

In the pic above I stirred some pre-cooked quinoa into the soup to make it a #powerbowl combo of veggies and protein.

I also made the most absurd sounding and amazing recipe I’ve ever created entirely on my own!

                                                                              Cannellini Ranch Dressing

ranchIngredients:

  • 1 can (15oz) cannellini beans, drained and throughly rinsed
  • 1tsp dried parsley
  • 1tsp black pepper (more if you want a peppercorn ranch flavor)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp dried thyme
  • 1/4C almond milk (or use regular milk if you’re not #dairyfree)
  • drizzle of EVOO

Put all ingredients in food processor and pulse a few times. Then start to drizzle EVOO into the top of food processor until you have the consistency you desire. It’s not exactly like ranch, but it is a darn good substitute for dressing that actually adds protein and healthy carbohydrates to your meal! You’re welcome!

Thankful Thursday!

Happy Thursday!!!

I’ve been thinking about how many things I have to be thankful for in my life, and I love alliteration, so it’s Thankful Thursday! This morning I woke up bright-eyed and bushy-tailed at 6:30am (and I’m NOT a morning person)…no alarm…just woke up! And, I’m so thankful that I had the extra time to do some devotional readings, catch up on the news, go to the post office, and have a quick chat with a dear friend…all before work! God is certainly good to me in more ways than I can even realize!

Waking up early also gave me time to think about how I could celebrate that today’s #powerplant letter is G! So…

Gift giving… I love sending packages to friends 🙂

Green goodness in a glass… this morning I made my smoothie with 1C kale, 1 pear, 1C almond milk, some aloe vera juice, a scoop of chlorella, a few ice cubes and some stevia… It was delicious!

Green goodness on a plate… my co-worker made us lunch! Salmon filets on a bed of spinach! So, I added my home-made rainbow salsa and chowed down #plantpower style.

Getting to get away! I’ll be headed to the Sunshine state in 20 days!!! Just another reason why FebruHABITS are so helpful this month… summer is just around the corner!
